Sunny's Vegan Carrot Cake
Inspired by the carrot cakes we loved as kids growing up in Texas (massive, sweet, and loaded with pecans) but reimagined with the flavors we love now as adults. The sweetness is more subtle and balanced with rich spices, but still loaded with texture!
Layers of rich and spicy carrot cake with crunchy toasted pecans, chewy stem ginger and of course the freshest carrots! Lathered with vegan maple cream cheese frosting with a hint of cardamom for extra flavor.
We keep our layer cakes to the perfect size (4 inches round) for an afternoon or evening treat. You never need to wonder if you can finish it or have a cake sitting around for days! Each cake serves 2 – 4 people, or 1 if you love cake as much as we do.
